AKOPOL™ LT 11 is a natural emulsifier and stabilizer developed specifically for food applications. It is a blend of mono- and diglycerides and is used to improve the texture and shelf life of a variety of food products, including baked goods, icings, ice cream, and more. It can also be used to reduce the stickiness of dough, extend shelf life, and improve the aeration of dough. This AKOPOLTM product contains 58% saturated fatty acids and 11% trans fatty acids. This product has a low viscosity, is non-lauric, and does not temper. With a lower percentage of saturated and trans fatty acids, it has a healthier profile and will produce a product with good meltdown and bloom stability. It can be used in conventional coatings.
