AKOPOL™ MC 70 is a fat-based emulsifier and stabilizer used in the food industry. It is a blend of mono- and diglycerides of fatty acids derived from coconut and palm kernel oil. It is used to improve the texture and stability of products, such as baked goods, dressings, margarines, and ice cream. It also helps to prevent the separation of oil and water in food products. One of the non-lauric CBRs (Cocoa Butter Replacers) in the AKOPOLTM line of specialised fat compounds for coating and moulding is AKOPOLTM MC 70. It provides great sensory qualities compatible with cocoa liquor for coatings and moulded items where a nice meltdown is essential. When cocoa liquor is added, the taste and meltdown characteristics are quite similar to those of chocolate.
